Cranberry Moscow Mule

I love a good Moscow Mule, it is my go to cocktail. It’s light, crisp, refreshing, and it’s perfect anytime of the year. You can make a mule in all sorts of different ways. When the weather is cold, I love making an Irish mule and adding some whiskey, instead of vodka, to it.
When I came across this Cranberry Moscow Mule, I had to try it. I love the sweetness and tartness from cranberries and how beautiful is this cocktail? It is so fitting for the holidays.

Ingredients
Cranberry Syrup
1 Cup fresh cranberries
½ Cup water
¼ Cup Honey (or ½ Cup sugar)
Cranberry Moscow Mule
2 oz. Vodka (I prefer Tito’s)
1 oz. cranberry syrup
½ oz. fresh squeezed lime juice
6 oz. ginger beer
Garnish (optional)
Lime wedge
Mint sprig
Fresh cranberries
Directions
- Combine the cranberries, water, and honey in a small saucepan and place over medium-high heat. Bring the liquid to a boil, then reduce to low and simmer, stirring frequently until the cranberries soften, then fall apart.
- Pour the syrup through a fine mesh strainer, and press on the cranberries with a spatula to release as much syrup as possible. Set aside to cool. If the syrup thickens too much as it cools, add water, a tablespoon at a time, until the consistency resembles honey.
- To make one cocktail, combine the vodka, cranberry syrup and lime juice in a copper mug. Stir to combine. Fill the mug halfway with crushed ice. Pour the ginger beer over the ice and stir once more. Top with additional crushed ice, a sprig of mint, a lime wedge, and fresh cranberries
